Ingredients:
- 1 cup (125g) all-purpose flour
- 1 tsp (5g) baking soda
- 1 tsp (5g) baking powder
- ½ tsp (2g) ground cinnamon
- ¼ tsp (1.5g) salt
- 3 medium (340g) overripe bananas, mashed
- ½ cup (115g) unsalted butter, melted and cooled
- ½ cup (100g) light brown sugar, packed
- 1 large (50g) egg, room temperature
- 1 tsp (5ml) pure vanilla extract
Instructions:
- Place silicone muffin cups into the air fryer basket and lightly grease them with non-stick spray.
- In a large bowl, mash the overripe bananas until smooth with only a few small lumps.
- Whisk the melted butter, brown sugar, egg, and vanilla extract into the mashed bananas until the mixture is smooth.
- In a separate medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, and salt.
- Pour the dry ingredients into the wet ingredients and gently fold with a rubber spatula until no streaks of flour remain.
- Divide the batter evenly among the silicone liners, filling them about ¾ of the way full.
- Set the air fryer to 320°F (160°C) and cook for 10–12 minutes until the tops are golden-brown and a toothpick inserted into the center comes out clean.
