Ingredients:

  • 1 cup (125g) all-purpose flour
  • 1 tsp (5g) baking soda
  • 1 tsp (5g) baking powder
  • ½ tsp (2g) ground cinnamon
  • ¼ tsp (1.5g) salt
  • 3 medium (340g) overripe bananas, mashed
  • ½ cup (115g) unsalted butter, melted and cooled
  • ½ cup (100g) light brown sugar, packed
  • 1 large (50g) egg, room temperature
  • 1 tsp (5ml) pure vanilla extract

Instructions:

  1. Place silicone muffin cups into the air fryer basket and lightly grease them with non-stick spray.
  2. In a large bowl, mash the overripe bananas until smooth with only a few small lumps.
  3. Whisk the melted butter, brown sugar, egg, and vanilla extract into the mashed bananas until the mixture is smooth.
  4. In a separate medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, and salt.
  5. Pour the dry ingredients into the wet ingredients and gently fold with a rubber spatula until no streaks of flour remain.
  6. Divide the batter evenly among the silicone liners, filling them about ¾ of the way full.
  7. Set the air fryer to 320°F (160°C) and cook for 10–12 minutes until the tops are golden-brown and a toothpick inserted into the center comes out clean.
