Ingredients:

  • 1.5 cups all-purpose flour (190g)
  • 0.75 cup granulated sugar (150g)
  • 2 tsp baking powder (10g)
  • 0.5 tsp salt (3g)
  • 0.5 cup whole milk (120ml)
  • 0.33 cup vegetable oil (80ml)
  • 1 large egg (50g)
  • 1 tsp vanilla extract (5ml)
  • 1 cup fresh blueberries (150g)
  • 1 tbsp coarse sugar (12g)

Instructions:

  1. Whisk the flour, sugar, baking powder, and salt in a medium bowl. Note: This ensures the leavening agent is evenly spread.
  2. Combine the egg, milk, vegetable oil, and vanilla in a separate bowl. Whisk until the oil is fully blended.
  3. Pour the wet mixture into the dry bowl. Stir with a spatula until the flour streaks just disappear.
  4. Fold in the blueberries gently. Note: Over mixing here makes the muffins tough.
  5. Preheat the air fryer to 320°F (160°C).
  6. Scoop the batter into silicone liners, filling them 3/4 of the way.
  7. Sprinkle the tops with coarse sugar.
  8. Bake for 12-15 minutes until the tops are golden brown and a pick comes back dry.
