Ingredients:
- 1.5 cups all-purpose flour (190g)
- 0.75 cup granulated sugar (150g)
- 2 tsp baking powder (10g)
- 0.5 tsp salt (3g)
- 0.5 cup whole milk (120ml)
- 0.33 cup vegetable oil (80ml)
- 1 large egg (50g)
- 1 tsp vanilla extract (5ml)
- 1 cup fresh blueberries (150g)
- 1 tbsp coarse sugar (12g)
Instructions:
- Whisk the flour, sugar, baking powder, and salt in a medium bowl. Note: This ensures the leavening agent is evenly spread.
- Combine the egg, milk, vegetable oil, and vanilla in a separate bowl. Whisk until the oil is fully blended.
- Pour the wet mixture into the dry bowl. Stir with a spatula until the flour streaks just disappear.
- Fold in the blueberries gently. Note: Over mixing here makes the muffins tough.
- Preheat the air fryer to 320°F (160°C).
- Scoop the batter into silicone liners, filling them 3/4 of the way.
- Sprinkle the tops with coarse sugar.
- Bake for 12-15 minutes until the tops are golden brown and a pick comes back dry.
