Ingredients:
- 1.5 cups (190g) all-purpose flour
- 0.5 cup (100g) granulated sugar
- 2 tsp (10g) baking powder
- 0.25 tsp (1.5g) salt
- 1 large (50g) egg
- 0.5 cup (120ml) whole milk
- 0.33 cup (75g) unsalted butter, melted and cooled
- 1 tsp (5ml) vanilla extract
- 1 cup (150g) fresh blueberries
- 1 tbsp (8g) all-purpose flour
Instructions:
- In a large bowl, combine 1.5 cups flour, sugar, baking powder, and salt. Whisk until no clumps remain.
- In a medium bowl, whisk the egg, milk, melted butter, and vanilla until smooth.
- Pour the wet mixture into the dry ingredients and fold gently with a spatula until just combined; do not overmix.
- Toss fresh blueberries in 1 tablespoon of flour, then gently fold them into the batter.
- Grease 6-ounce ramekins or silicone liners and fill them approximately 3/4 full.
- Place muffins in the air fryer and bake at 370°F (188°C) for 4 minutes to set the dome.
- Reduce the air fryer temperature to 320°F (160°C) and bake for an additional 8 to 10 minutes.
- Perform the toothpick test to ensure the center is baked, then remove and let rest in ramekins for 5 minutes before serving.
