  • 0.5 cup (100g) granulated sugar
  • 2 tsp (10g) baking powder
  • 0.25 tsp (1.5g) salt
  • 1 large (50g) egg
  • 0.5 cup (120ml) whole milk
  • 0.33 cup (75g) unsalted butter, melted and cooled
  • 1 tsp (5ml) vanilla extract
  • 1 cup (150g) fresh blueberries
  • 1 tbsp (8g) all-purpose flour

Instructions:

  1. In a large bowl, combine 1.5 cups flour, sugar, baking powder, and salt. Whisk until no clumps remain.
  2. In a medium bowl, whisk the egg, milk, melted butter, and vanilla until smooth.
  3. Pour the wet mixture into the dry ingredients and fold gently with a spatula until just combined; do not overmix.
  4. Toss fresh blueberries in 1 tablespoon of flour, then gently fold them into the batter.
  5. Grease 6-ounce ramekins or silicone liners and fill them approximately 3/4 full.
  6. Place muffins in the air fryer and bake at 370°F (188°C) for 4 minutes to set the dome.
  7. Reduce the air fryer temperature to 320°F (160°C) and bake for an additional 8 to 10 minutes.
  8. Perform the toothpick test to ensure the center is baked, then remove and let rest in ramekins for 5 minutes before serving.
