Ingredients:

  • 1.5 lb flank steak
  • 1/3 cup olive oil
  • 1/4 cup soy sauce
  • 1 tbsp brown sugar
  • 3 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 1 tsp coarse black pepper
  • 1/2 tsp salt

Instructions:

  1. Whisk the olive oil, soy sauce, brown sugar, minced garlic, ginger, and pepper in a small bowl until the sugar dissolves. Pour this into a Ziploc bag.
  2. Slide the flank steak into the bag. Squeeze out all the air before sealing Note: this ensures the meat is fully submerged.
  3. Refrigerate for 2 hours. If you have the time, leave it overnight for a more tender result.
  4. Set your oven to 'Broil' and move the rack to the 4-6 inch position from the top.
  5. Line a baking sheet with foil and place a wire rack on top.
  6. Place the marinated steak on the rack. Broil for 6-8 minutes on the first side until the edges are blackened and bubbling.
  7. Flip the meat. Broil for another 6-8 minutes until the internal temperature hits 130°F (54°C) for medium rare.
  8. Move the steak to a cutting board. Let it rest for 10 minutes Note: this keeps the juices from running out.
  9. Slice the Broiled Flank Steak thinly against the grain on a diagonal.
