Ingredients:
- 2 cups (250g) all-purpose flour
- 1 tbsp (12g) baking powder
- 1 tsp (6g) salt
- 1/2 tsp (2g) garlic powder
- 1/4 tsp (1g) black pepper
- 1 cup (240ml) whole milk
- 1 large egg
- 1/3 cup (75g) unsalted butter, melted and slightly cooled
- 2 cups (225g) sharp cheddar cheese, freshly grated
Instructions:
- Preheat oven to 400°F (200°C). Line a 12-cup standard muffin tin with paper liners or grease generously with butter.
- In a large mixing bowl, whisk together the all-purpose flour, baking powder, salt, garlic powder, and black pepper.
- In a separate jug, whisk together the room-temperature whole milk, large egg, and melted butter.
- Pour the wet ingredients into the dry ingredients and stir with a spatula until just combined. Do not overmix; ensure a few lumps remain to keep the muffins tender.
- Gently fold in the grated sharp cheddar cheese until evenly distributed throughout the batter.
- Divide the batter equally among the 12 muffin cups, filling each approximately 3/4 of the way.
- Bake for 18–22 minutes until the tops are golden-brown and a toothpick inserted into the center comes out clean.
- Allow muffins to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
