Ingredients:
- 2 cups (250g) all-purpose flour
- 1 tbsp (12g) baking powder
- ½ tsp (3g) baking soda
- ½ tsp (3g) salt
- 1 tsp (3g) garlic powder
- 2 cups (220g) grated zucchini, squeezed dry
- 1 ½ cups (170g) sharp cheddar cheese, shredded
- 2 large (100g) eggs
- ½ cup (120g) plain Greek yogurt
- ¼ cup (60ml) milk
- 3 tbsp (42g) unsalted butter, melted and cooled
Instructions:
- Grate the zucchini using the medium holes of a box grater. Place the shreds in a clean kitchen towel or nut milk bag and squeeze firmly over the sink until no more liquid escapes.
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and garlic powder.
- In a separate large bowl, beat the eggs, then stir in the Greek yogurt, milk, and melted butter until the mixture is smooth.
- Fold the squeezed zucchini and shredded cheddar into the wet mixture until evenly distributed.
- Gently fold the dry ingredients into the wet mixture using a spatula. Stir only until no streaks of flour remain.
- Scoop the batter into lined muffin tins, filling each about ¾ full.
- Bake at 375°F (190°C) for 18-22 minutes, or until the tops are mahogany-colored and a toothpick inserted into the center comes out clean.
