Ingredients:
- 8 large eggs
- 1/2 cup whole milk
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp garlic powder
- 1/4 tsp paprika
- 1 cup shredded sharp cheddar cheese
- 1/2 cup diced ham
- 2 tbsp melted butter
- 1/4 cup chopped fresh chives
Instructions:
- Preheat your oven to 350°F (175°C) and generously grease each slot of a standard 12-slot muffin tin with melted butter or oil.
- Divide the shredded cheddar cheese and diced ham evenly among the 12 muffin slots to prevent ingredients from sinking.
- In a large mixing bowl, crack 8 eggs and add the milk, salt, pepper, garlic powder, and paprika.
- Whisk the egg mixture vigorously for about 60 seconds until the batter is uniform and slightly frothy.
- Stir in the chopped fresh chives or green onions.
- Pour the egg mixture over the cheese and meat in each muffin slot, filling them approximately 3/4 of the way to the top.
- Place the tin on the center rack of the oven and bake for 20–22 minutes.
- Remove the muffins from the oven once the centers are set and the edges are golden brown.
