Ingredients:
- 115g unsalted butter, softened
- 125g creamy peanut butter
- 100g dark brown sugar, packed
- 50g granulated sugar
- 1 large egg
- 5ml vanilla extract
- 125g all-purpose flour
- 4g baking soda
- 1.5g salt
- 25g granulated sugar (for rolling)
Instructions:
- Cream the softened butter, peanut butter, brown sugar, and white sugar on medium high speed. Mix until the mixture looks like pale, creamy ribbons. Note: This incorporates air for a better lift.
- Mix in the egg and vanilla. Beat until the batter is glossy and smooth.
- Sift in the flour, baking soda, and salt. Mix on low speed just until the white streaks of flour disappear.
- Scoop rounded tablespoons of dough. Roll them into 1 inch balls.
- Roll each ball in the extra granulated sugar. Ensure an even coating for that sparkling finish.
- Place balls on the baking sheet. Use a fork to press a criss cross pattern into the top, flattening the ball slightly.
- Preheat your oven to 350°F (175°C).
- Bake for 10–12 minutes until the edges are a light golden brown.
- Remove from the oven when the centers still look slightly underbaked. Note: They will firm up on the hot pan.
- Let them cool on the pan for 5 minutes before moving them to a wire rack.
