Ingredients:

  • 115g unsalted butter, softened
  • 125g creamy peanut butter
  • 100g dark brown sugar, packed
  • 50g granulated sugar
  • 1 large egg
  • 5ml vanilla extract
  • 125g all-purpose flour
  • 4g baking soda
  • 1.5g salt
  • 25g granulated sugar (for rolling)

Instructions:

  1. Cream the softened butter, peanut butter, brown sugar, and white sugar on medium high speed. Mix until the mixture looks like pale, creamy ribbons. Note: This incorporates air for a better lift.
  2. Mix in the egg and vanilla. Beat until the batter is glossy and smooth.
  3. Sift in the flour, baking soda, and salt. Mix on low speed just until the white streaks of flour disappear.
  4. Scoop rounded tablespoons of dough. Roll them into 1 inch balls.
  5. Roll each ball in the extra granulated sugar. Ensure an even coating for that sparkling finish.
  6. Place balls on the baking sheet. Use a fork to press a criss cross pattern into the top, flattening the ball slightly.
  7. Preheat your oven to 350°F (175°C).
  8. Bake for 10–12 minutes until the edges are a light golden brown.
  9. Remove from the oven when the centers still look slightly underbaked. Note: They will firm up on the hot pan.
  10. Let them cool on the pan for 5 minutes before moving them to a wire rack.
