Ingredients:
- 1 1/2 cups (190g) all-purpose flour
- 1 tsp (5g) baking soda
- 1/2 tsp (3g) salt
- 1 tsp (2g) ground cinnamon
- 1/2 cup (115g) unsalted butter, melted and cooled
- 3/4 cup (150g) brown sugar, packed
- 2 large eggs (100g)
- 1 tsp (5ml) vanilla extract
- 1 cup (225g) mashed overripe bananas
- 1 cup (120g) grated zucchini, squeezed lightly of excess water
- 1 cup (170g) semi-sweet chocolate chips
Instructions:
- Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan or line it with parchment paper.
- Grate the zucchini using the fine holes of the grater. Place the shreds in a paper towel and give them a gentle squeeze to remove excess water.
- In a small bowl, mash the bananas until smooth with a few small chunks remaining for texture.
- In a large bowl, whisk the melted butter and brown sugar until combined. Stir in the eggs, vanilla, mashed banana, and grated zucchini until the mixture is uniform.
- Sprinkle the flour, baking soda, salt, and cinnamon directly over the wet ingredients. Using a spatula, fold the mixture gently until no more streaks of white flour are visible.
- Fold in the chocolate chips using three or four sweeping motions to avoid overworking the batter.
- Transfer the batter into the prepared loaf pan and bake for 60 minutes or until a toothpick inserted into the center comes out clean.
