Ingredients:

  • 1 1/2 cups (190g) all-purpose flour
  • 1 tsp (5g) baking soda
  • 1/2 tsp (3g) salt
  • 1 tsp (2g) ground cinnamon
  • 1/2 cup (115g) unsalted butter, melted and cooled
  • 3/4 cup (150g) brown sugar, packed
  • 2 large eggs (100g)
  • 1 tsp (5ml) vanilla extract
  • 1 cup (225g) mashed overripe bananas
  • 1 cup (120g) grated zucchini, squeezed lightly of excess water
  • 1 cup (170g) semi-sweet chocolate chips

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan or line it with parchment paper.
  2. Grate the zucchini using the fine holes of the grater. Place the shreds in a paper towel and give them a gentle squeeze to remove excess water.
  3. In a small bowl, mash the bananas until smooth with a few small chunks remaining for texture.
  4. In a large bowl, whisk the melted butter and brown sugar until combined. Stir in the eggs, vanilla, mashed banana, and grated zucchini until the mixture is uniform.
  5. Sprinkle the flour, baking soda, salt, and cinnamon directly over the wet ingredients. Using a spatula, fold the mixture gently until no more streaks of white flour are visible.
  6. Fold in the chocolate chips using three or four sweeping motions to avoid overworking the batter.
  7. Transfer the batter into the prepared loaf pan and bake for 60 minutes or until a toothpick inserted into the center comes out clean.
