Ingredients:

  • 2 cups (225g) grated zucchini
  • 1/2 cup (120ml) vegetable oil
  • 1 cup (200g) granulated sugar
  • 2 large eggs
  • 1 tsp (5ml) vanilla extract
  • 2 cups (250g) all-purpose flour
  • 1 tsp (5g) baking soda
  • 1 tsp (5g) baking powder
  • 1/2 tsp (3g) salt
  • 1 tsp (2g) ground cinnamon
  • 1 cup (170g) semi-sweet chocolate chips

Instructions:

  1. Preheat oven to 350°F (175°C) and grease a 9x5-inch loaf pan with butter or oil, or line with parchment paper.
  2. Grate the zucchini using the medium holes of a box grater and set aside.
  3. In a large bowl, whisk together the vegetable oil, sugar, eggs, and vanilla extract until the mixture is smooth and pale.
  4. Stir the grated zucchini into the wet mixture until evenly distributed.
  5. In a separate medium bowl, sift together the all-purpose flour, baking soda, baking powder, salt, and ground cinnamon.
  6. Gently fold the dry ingredients into the wet mixture using a spatula, stopping as soon as no streaks of flour remain to avoid overmixing.
  7. Fold in 3/4 cup of the semi-sweet chocolate chips.
  8. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  9. Sprinkle the remaining 1/4 cup of chocolate chips over the top of the batter.
  10. Bake for 50 minutes or until a toothpick inserted into the center comes out clean.
