Ingredients:
- 2 cups (225g) grated zucchini
- 1/2 cup (120ml) vegetable oil
- 1 cup (200g) granulated sugar
- 2 large eggs
- 1 tsp (5ml) vanilla extract
- 2 cups (250g) all-purpose flour
- 1 tsp (5g) baking soda
- 1 tsp (5g) baking powder
- 1/2 tsp (3g) salt
- 1 tsp (2g) ground cinnamon
- 1 cup (170g) semi-sweet chocolate chips
Instructions:
- Preheat oven to 350°F (175°C) and grease a 9x5-inch loaf pan with butter or oil, or line with parchment paper.
- Grate the zucchini using the medium holes of a box grater and set aside.
- In a large bowl, whisk together the vegetable oil, sugar, eggs, and vanilla extract until the mixture is smooth and pale.
- Stir the grated zucchini into the wet mixture until evenly distributed.
- In a separate medium bowl, sift together the all-purpose flour, baking soda, baking powder, salt, and ground cinnamon.
- Gently fold the dry ingredients into the wet mixture using a spatula, stopping as soon as no streaks of flour remain to avoid overmixing.
- Fold in 3/4 cup of the semi-sweet chocolate chips.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Sprinkle the remaining 1/4 cup of chocolate chips over the top of the batter.
- Bake for 50 minutes or until a toothpick inserted into the center comes out clean.
