Ingredients:

  • 3 large overripe bananas, mashed (approx. 1 cup)
  • 1.5 cups finely shredded zucchini, squeezed dry
  • 0.5 cup melted unsalted butter
  • 2 large eggs
  • 1 tsp pure vanilla extract
  • 0.5 cup light brown sugar, packed
  • 1.5 cups all-purpose flour
  • 0.5 cup unsweetened cocoa powder
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 1 tsp ground cinnamon
  • 1 cup semi-sweet chocolate chips

Instructions:

  1. Grate the zucchini using the fine holes of the grater. Place the shreds in a kitchen towel and squeeze firmly over the sink to remove as much liquid as possible.
  2. In a large bowl, mash the bananas until smooth, then stir in the squeezed zucchini, melted butter, eggs, vanilla, and brown sugar.
  3. In a separate bowl, sift together the flour, cocoa powder, baking soda, salt, and cinnamon.
  4. Gradually fold the dry ingredients into the wet mixture using a rubber spatula. Stop mixing the moment no streaks of flour remain to avoid a tough texture.
  5. Gently fold in 3/4 cup of chocolate chips.
  6. Pour the batter into a greased 9x5 inch loaf pan and smooth the top.
  7. Sprinkle the remaining 1/4 cup of chocolate chips across the surface.
  8. Bake for 55 minutes.
