Ingredients:
- 3 large overripe bananas, mashed (approx. 1 cup)
- 1.5 cups finely shredded zucchini, squeezed dry
- 0.5 cup melted unsalted butter
- 2 large eggs
- 1 tsp pure vanilla extract
- 0.5 cup light brown sugar, packed
- 1.5 cups all-purpose flour
- 0.5 cup unsweetened cocoa powder
- 1 tsp baking soda
- 0.5 tsp salt
- 1 tsp ground cinnamon
- 1 cup semi-sweet chocolate chips
Instructions:
- Grate the zucchini using the fine holes of the grater. Place the shreds in a kitchen towel and squeeze firmly over the sink to remove as much liquid as possible.
- In a large bowl, mash the bananas until smooth, then stir in the squeezed zucchini, melted butter, eggs, vanilla, and brown sugar.
- In a separate bowl, sift together the flour, cocoa powder, baking soda, salt, and cinnamon.
- Gradually fold the dry ingredients into the wet mixture using a rubber spatula. Stop mixing the moment no streaks of flour remain to avoid a tough texture.
- Gently fold in 3/4 cup of chocolate chips.
- Pour the batter into a greased 9x5 inch loaf pan and smooth the top.
- Sprinkle the remaining 1/4 cup of chocolate chips across the surface.
- Bake for 55 minutes.
