Ingredients:

  • 2 cups (250g) all-purpose flour
  • 1/2 cup (45g) Dutch-processed cocoa powder
  • 1 tsp (5g) baking soda
  • 1/2 tsp (3g) salt
  • 1 cup (200g) granulated sugar
  • 1/2 cup (120ml) neutral oil
  • 2 large (100g) eggs
  • 1 tsp (5ml) vanilla extract
  • 1 1/2 cups (225g) finely grated zucchini
  • 1 cup (170g) semi-sweet chocolate chips

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9x5 inch loaf pan and line it with parchment paper, leaving an overhang on the sides for easy removal.
  3. Grate the zucchini using the fine holes of the grater; do not squeeze the water out.
  4. In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt until no cocoa clumps remain.
  5. In a larger bowl, beat the eggs and sugar until pale and fluffy. Whisk in the oil and vanilla extract.
  6. Gently fold the grated zucchini into the wet mixture.
  7. Gradually add the dry ingredients to the wet mixture. Use a spatula to fold them together just until no streaks of flour remain.
  8. Fold in the semi-sweet chocolate chips.
  9. Pour the batter into the prepared pan and smooth the top.
  10. Bake for 60–70 minutes, until the edges pull away slightly from the pan.
