Ingredients:
- 2 cups (250g) all-purpose flour
- 1/2 cup (45g) Dutch-processed cocoa powder
- 1 tsp (5g) baking soda
- 1/2 tsp (3g) salt
- 1 cup (200g) granulated sugar
- 1/2 cup (120ml) neutral oil
- 2 large (100g) eggs
- 1 tsp (5ml) vanilla extract
- 1 1/2 cups (225g) finely grated zucchini
- 1 cup (170g) semi-sweet chocolate chips
Instructions:
- Preheat your oven to 350°F (175°C).
- Grease a 9x5 inch loaf pan and line it with parchment paper, leaving an overhang on the sides for easy removal.
- Grate the zucchini using the fine holes of the grater; do not squeeze the water out.
- In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt until no cocoa clumps remain.
- In a larger bowl, beat the eggs and sugar until pale and fluffy. Whisk in the oil and vanilla extract.
- Gently fold the grated zucchini into the wet mixture.
- Gradually add the dry ingredients to the wet mixture. Use a spatula to fold them together just until no streaks of flour remain.
- Fold in the semi-sweet chocolate chips.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 60–70 minutes, until the edges pull away slightly from the pan.
