Ingredients:

  • 1/2 cup (65g) all-purpose flour
  • 1/3 cup (65g) packed light brown sugar
  • 1 tsp (2g) ground cinnamon
  • 3 tbsp (42g) unsalted butter, cold and cubed
  • 2 cups (250g) all-purpose flour
  • 1/2 cup (100g) granulated sugar
  • 1 tbsp (8g) baking powder
  • 1 tsp (2g) ground cinnamon
  • 1/2 tsp (3g) salt
  • 1 large egg
  • 1/2 cup (120ml) whole milk
  • 1/3 cup (80ml) neutral oil
  • 1 tsp (5ml) vanilla extract
  • 1 1/2 cups (225g) Granny Smith apples, peeled and finely diced

Instructions:

  1. Preheat oven to 400°F (200°C) and line a 12-cup muffin tin with paper liners.
  2. Prepare the streusel by rubbing cold cubed butter into the 1/2 cup flour, brown sugar, and cinnamon using fingertips until coarse crumbs form. Set aside.
  3. In a large bowl, whisk together 2 cups flour, granulated sugar, baking powder, cinnamon, and salt.
  4. In a separate jug, whisk the egg, milk, oil, and vanilla extract until smooth.
  5. Pour the wet ingredients into the dry ingredients and gently fold with a spatula until just combined, leaving some small lumps.
  6. Gently fold in the diced apples.
  7. Divide the batter evenly among the 12 muffin cups, filling them nearly to the top.
  8. Generously sprinkle the streusel topping over each muffin.
  9. Bake for 18–22 minutes until the tops are mahogany-colored and a toothpick comes out clean.
