Ingredients:
- 1/2 cup (65g) all-purpose flour
- 1/3 cup (65g) packed light brown sugar
- 1 tsp (2g) ground cinnamon
- 3 tbsp (42g) unsalted butter, cold and cubed
- 2 cups (250g) all-purpose flour
- 1/2 cup (100g) granulated sugar
- 1 tbsp (8g) baking powder
- 1 tsp (2g) ground cinnamon
- 1/2 tsp (3g) salt
- 1 large egg
- 1/2 cup (120ml) whole milk
- 1/3 cup (80ml) neutral oil
- 1 tsp (5ml) vanilla extract
- 1 1/2 cups (225g) Granny Smith apples, peeled and finely diced
Instructions:
- Preheat oven to 400°F (200°C) and line a 12-cup muffin tin with paper liners.
- Prepare the streusel by rubbing cold cubed butter into the 1/2 cup flour, brown sugar, and cinnamon using fingertips until coarse crumbs form. Set aside.
- In a large bowl, whisk together 2 cups flour, granulated sugar, baking powder, cinnamon, and salt.
- In a separate jug, whisk the egg, milk, oil, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and gently fold with a spatula until just combined, leaving some small lumps.
- Gently fold in the diced apples.
- Divide the batter evenly among the 12 muffin cups, filling them nearly to the top.
- Generously sprinkle the streusel topping over each muffin.
- Bake for 18–22 minutes until the tops are mahogany-colored and a toothpick comes out clean.
