Ingredients:
- 6 large (300g) eggs
- 1 cup (225g) cottage cheese
- 1/2 tsp (3g) salt
- 1/4 tsp (1g) black pepper
- 1/4 tsp (1g) garlic powder
- 1 cup (115g) sharp cheddar cheese, shredded
- 1/2 cup (60g) ham, finely diced
- 3 tbsp (15g) green onions, thinly sliced
- 1 cup (150g) fresh spinach, finely chopped
Instructions:
- Preheat your oven to 350°F (175°C) and line a 12-slot muffin tin with parchment paper liners.
- Chop the ham, green onions, and spinach into small, uniform pieces.
- Place the eggs, cottage cheese, salt, pepper, and garlic powder into a blender. Process on high for 30–45 seconds until the mixture is completely smooth and pale yellow.
- Pour the blended base into a mixing bowl and gently fold in the shredded cheddar, diced ham, green onions, and chopped spinach using a spatula until combined.
- Divide the batter evenly among the 12 liners, filling each about 3/4 of the way to the top.
- Bake for 25–30 minutes until the edges are set, the tops are slightly golden-brown, and a toothpick inserted into the center comes out clean.
