Ingredients:

  • 6 large (300g) eggs
  • 1 cup (225g) cottage cheese
  • 1/2 tsp (3g) salt
  • 1/4 tsp (1g) black pepper
  • 1/4 tsp (1g) garlic powder
  • 1 cup (115g) sharp cheddar cheese, shredded
  • 1/2 cup (60g) ham, finely diced
  • 3 tbsp (15g) green onions, thinly sliced
  • 1 cup (150g) fresh spinach, finely chopped

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a 12-slot muffin tin with parchment paper liners.
  2. Chop the ham, green onions, and spinach into small, uniform pieces.
  3. Place the eggs, cottage cheese, salt, pepper, and garlic powder into a blender. Process on high for 30–45 seconds until the mixture is completely smooth and pale yellow.
  4. Pour the blended base into a mixing bowl and gently fold in the shredded cheddar, diced ham, green onions, and chopped spinach using a spatula until combined.
  5. Divide the batter evenly among the 12 liners, filling each about 3/4 of the way to the top.
  6. Bake for 25–30 minutes until the edges are set, the tops are slightly golden-brown, and a toothpick inserted into the center comes out clean.
