Ingredients:

  • 1.5 cups whole wheat pastry flour
  • 0.5 cup unsweetened cocoa powder
  • 0.75 cup coconut sugar
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 2 large eggs
  • 0.5 cup unsweetened applesauce
  • 1 tsp vanilla extract
  • 1.5 cups grated zucchini
  • 0.5 cup dark chocolate chips
  • 0.5 cup chopped walnuts

Instructions:

  1. Grate the zucchini using the fine holes of a box grater. Gently press the shreds with a paper towel to remove excess water, ensuring some moisture remains.
  2. Whisk the eggs, applesauce, and vanilla extract in a large bowl until the mixture is smooth and pale, then stir in the grated zucchini.
  3. Sift the flour, cocoa powder, sugar, baking soda, and salt directly into the wet mixture and fold gently with a spatula until no streaks of flour remain.
  4. Gently stir in the dark chocolate chips and chopped walnuts.
  5. Transfer the batter into a parchment-lined 9x5 inch loaf pan, smoothing the top with a spatula.
  6. Bake at 350°F (175°C) for 50–55 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs attached.
