Ingredients:
- 1.5 cups whole wheat pastry flour
- 0.5 cup unsweetened cocoa powder
- 0.75 cup coconut sugar
- 1 tsp baking soda
- 0.5 tsp salt
- 2 large eggs
- 0.5 cup unsweetened applesauce
- 1 tsp vanilla extract
- 1.5 cups grated zucchini
- 0.5 cup dark chocolate chips
- 0.5 cup chopped walnuts
Instructions:
- Grate the zucchini using the fine holes of a box grater. Gently press the shreds with a paper towel to remove excess water, ensuring some moisture remains.
- Whisk the eggs, applesauce, and vanilla extract in a large bowl until the mixture is smooth and pale, then stir in the grated zucchini.
- Sift the flour, cocoa powder, sugar, baking soda, and salt directly into the wet mixture and fold gently with a spatula until no streaks of flour remain.
- Gently stir in the dark chocolate chips and chopped walnuts.
- Transfer the batter into a parchment-lined 9x5 inch loaf pan, smoothing the top with a spatula.
- Bake at 350°F (175°C) for 50–55 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs attached.
