Ingredients:

  • 1.5 cups (190g) all-purpose flour
  • 0.5 cup (45g) unsweetened cocoa powder
  • 1 tsp (5g) baking soda
  • 0.5 tsp (3g) salt
  • 1 cup (200g) granulated sugar
  • 0.5 cup (120ml) vegetable oil
  • 2 large eggs
  • 1 tsp (5ml) vanilla extract
  • 1.5 cups (225g) grated zucchini
  • 0.5 cup (90g) semi-sweet chocolate chips
  • 0.25 cup (55g) unsalted butter
  • 3 tbsp (22g) cocoa powder
  • 1 cup (120g) powdered sugar
  • 2 tbsp (30ml) milk

Instructions:

  1. Preheat oven to 350°F (175°C). Grease an 8x8 inch square pan or line it with parchment paper.
  2. Grate the zucchini using a box grater; do not peel the skin.
  3. Whisk together the all-purpose flour, 45g cocoa powder, baking soda, and salt in a large bowl.
  4. In a separate bowl, beat the granulated sugar, vegetable oil, eggs, and vanilla extract until smooth.
  5. Stir the dry ingredients into the wet ingredients until just combined.
  6. Gently fold in the grated zucchini and semi-sweet chocolate chips.
  7. Pour the batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
  8. Prepare the glaze by melting the unsalted butter, whisking in 22g cocoa powder and powdered sugar, and stirring in milk until glossy.
  9. Pour the chocolate glaze over the cake once it has cooled.
