Ingredients:
- 1.5 cups (190g) all-purpose flour
- 0.5 cup (45g) unsweetened cocoa powder
- 1 tsp (5g) baking soda
- 0.5 tsp (3g) salt
- 1 cup (200g) granulated sugar
- 0.5 cup (120ml) vegetable oil
- 2 large eggs
- 1 tsp (5ml) vanilla extract
- 1.5 cups (225g) grated zucchini
- 0.5 cup (90g) semi-sweet chocolate chips
- 0.25 cup (55g) unsalted butter
- 3 tbsp (22g) cocoa powder
- 1 cup (120g) powdered sugar
- 2 tbsp (30ml) milk
Instructions:
- Preheat oven to 350°F (175°C). Grease an 8x8 inch square pan or line it with parchment paper.
- Grate the zucchini using a box grater; do not peel the skin.
- Whisk together the all-purpose flour, 45g cocoa powder, baking soda, and salt in a large bowl.
- In a separate bowl, beat the granulated sugar, vegetable oil, eggs, and vanilla extract until smooth.
- Stir the dry ingredients into the wet ingredients until just combined.
- Gently fold in the grated zucchini and semi-sweet chocolate chips.
- Pour the batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
- Prepare the glaze by melting the unsalted butter, whisking in 22g cocoa powder and powdered sugar, and stirring in milk until glossy.
- Pour the chocolate glaze over the cake once it has cooled.
