Ingredients:

  • 1 lb ground breakfast sausage
  • 1/2 cup diced yellow onion
  • 1 tsp smoked paprika
  • 10 large eggs
  • 1/4 cup heavy cream
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup shredded sharp cheddar cheese

Instructions:

  1. Heat a large skillet over medium-high heat. Add ground sausage and diced onion, cooking and breaking the meat apart with a spatula until browned and crumbly (about 5–7 minutes).
  2. Stir in smoked paprika during the last minute of cooking. Drain excess grease.
  3. Distribute the sausage mixture evenly among 12 greased muffin cups.
  4. In a large bowl, whisk together eggs, heavy cream, salt, and pepper until the mixture is a uniform pale yellow.
  5. Pour the egg mixture over the sausage in each cup, filling them about 3/4 of the way to the top.
  6. Sprinkle shredded cheddar cheese evenly across the tops of each muffin.
  7. Bake at 350°F (175°C) for 18–22 minutes, or until the centers are set and the cheese is golden-brown.
  8. Allow muffins to cool for 5 minutes before removing from the tin.
