Ingredients:
- 1 lb ground breakfast sausage
- 1/2 cup diced yellow onion
- 1 tsp smoked paprika
- 10 large eggs
- 1/4 cup heavy cream
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup shredded sharp cheddar cheese
Instructions:
- Heat a large skillet over medium-high heat. Add ground sausage and diced onion, cooking and breaking the meat apart with a spatula until browned and crumbly (about 5–7 minutes).
- Stir in smoked paprika during the last minute of cooking. Drain excess grease.
- Distribute the sausage mixture evenly among 12 greased muffin cups.
- In a large bowl, whisk together eggs, heavy cream, salt, and pepper until the mixture is a uniform pale yellow.
- Pour the egg mixture over the sausage in each cup, filling them about 3/4 of the way to the top.
- Sprinkle shredded cheddar cheese evenly across the tops of each muffin.
- Bake at 350°F (175°C) for 18–22 minutes, or until the centers are set and the cheese is golden-brown.
- Allow muffins to cool for 5 minutes before removing from the tin.
