Ingredients:

  • 2 lbs flank steak
  • 1/3 cup extra virgin olive oil
  • 1/4 cup fresh lime juice
  • 2 tbsp fresh orange juice
  • 2 tbsp soy sauce
  • 4 cloves garlic, minced
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 tbsp ground cumin
  • 1 tbsp chili powder
  • 1 tsp smoked paprika
  • 1/2 tsp dried oregano

Instructions:

  1. In a medium bowl, combine the olive oil, lime juice, orange juice, and soy sauce. Whisk vigorously until the mixture is cohesive and no longer separated.
  2. Stir in the minced garlic, salt, pepper, cumin, chili powder, smoked paprika, and oregano. Mix until the spices are fully hydrated and the marinade looks like a thick, reddish-brown paste.
  3. Pour the marinade into a gallon-sized freezer bag. Place your flank steak inside and seal the bag, squeezing out as much air as possible. Massage the bag for 2 minutes to ensure every inch of the meat is coated.
  4. Refrigerate for a minimum of 4 hours, ideally 8–12 hours before grilling.
