Ingredients:
- 1 1/2 cups (190g) all-purpose flour
- 1/2 cup (45g) unsweetened cocoa powder
- 1 tsp (5g) baking soda
- 1/2 tsp (3g) baking powder
- 1/2 tsp (3g) fine sea salt
- 1/2 cup (110g) neutral oil
- 1 cup (200g) granulated sugar
- 2 large (100g) eggs, room temperature
- 1/2 cup (120g) sour cream
- 1 tsp (5ml) pure vanilla extract
- 2 cups (230g) grated zucchini, lightly pressed
- 1 cup (170g) semi-sweet chocolate chips
Instructions:
- Preheat oven to 350°F (175°C). Grease a 9x5 loaf pan or line with parchment paper for an easy release.
- In a medium bowl, sift together flour, cocoa powder, baking soda, baking powder, and salt to remove cocoa clumps.
- In a large bowl, whisk oil and sugar until combined. Beat in eggs one at a time, then stir in sour cream and vanilla until the batter is smooth and glossy.
- Fold the grated zucchini into the wet mixture using a spatula.
- Gently fold the dry ingredients into the wet batter until no streaks of flour remain; do not overmix.
- Fold in 3/4 cup of chocolate chips, reserving the remainder for the top.
- Pour batter into the prepared loaf pan and sprinkle the remaining chocolate chips on top.
- Bake for 50 minutes or until a toothpick inserted into the center comes out clean.
