Ingredients:

  • 1 1/2 cups (190g) all-purpose flour
  • 1/2 cup (45g) unsweetened cocoa powder
  • 1 tsp (5g) baking soda
  • 1/2 tsp (3g) baking powder
  • 1/2 tsp (3g) fine sea salt
  • 1/2 cup (110g) neutral oil
  • 1 cup (200g) granulated sugar
  • 2 large (100g) eggs, room temperature
  • 1/2 cup (120g) sour cream
  • 1 tsp (5ml) pure vanilla extract
  • 2 cups (230g) grated zucchini, lightly pressed
  • 1 cup (170g) semi-sweet chocolate chips

Instructions:

  1. Preheat oven to 350°F (175°C). Grease a 9x5 loaf pan or line with parchment paper for an easy release.
  2. In a medium bowl, sift together flour, cocoa powder, baking soda, baking powder, and salt to remove cocoa clumps.
  3. In a large bowl, whisk oil and sugar until combined. Beat in eggs one at a time, then stir in sour cream and vanilla until the batter is smooth and glossy.
  4. Fold the grated zucchini into the wet mixture using a spatula.
  5. Gently fold the dry ingredients into the wet batter until no streaks of flour remain; do not overmix.
  6. Fold in 3/4 cup of chocolate chips, reserving the remainder for the top.
  7. Pour batter into the prepared loaf pan and sprinkle the remaining chocolate chips on top.
  8. Bake for 50 minutes or until a toothpick inserted into the center comes out clean.
