Ingredients:
- 1 cup (120g) whole wheat flour
- 1 cup (90g) rolled oats
- 1 tsp (5g) baking powder
- 1/2 tsp (3g) baking soda
- 1 tsp (2g) ground cinnamon
- 1/4 tsp (1.5g) salt
- 1/2 cup (120g) plain Greek yogurt
- 1/3 cup (110ml) honey
- 1 large egg
- 1 tsp (5ml) vanilla extract
- 2 tbsp (30ml) coconut oil
- 1 1/2 cups (225g) fresh blueberries
- 1 tbsp (8g) whole wheat flour
Instructions:
- Preheat oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners.
- In a small bowl, toss the blueberries with 1 tablespoon of flour until lightly coated; set aside.
- In a large mixing bowl, whisk together the whole wheat flour, rolled oats, baking powder, baking soda, cinnamon, and salt until no clumps remain.
- In a medium bowl, whisk together the Greek yogurt, honey, egg, vanilla, and melted coconut oil until smooth and emulsified.
- Pour the wet ingredients into the dry ingredients and fold together gently with a spatula until no streaks of dry flour remain.
- Gently fold in the floured blueberries using a figure-eight motion to avoid crushing the fruit.
- Divide the batter evenly among the 12 muffin cups, filling each about 3/4 of the way.
- Bake for 18–22 minutes, or until the tops are light mahogany-brown and a toothpick inserted into the center comes out clean.
