Ingredients:
- 1 cup (120g) yellow cornmeal
- 1 cup (125g) all-purpose flour
- 1/4 cup (50g) granulated sugar
- 1 tbsp (10g) baking powder
- 1/2 tsp (3g) salt
- 1 cup (240ml) buttermilk
- 2 large eggs
- 1/2 cup (113g) unsalted butter, melted and cooled slightly
- 1 tsp (5ml) honey
- 1 1/2 cups (170g) sharp cheddar cheese, shredded
- 4 medium jalapeños, finely diced
- 2 tbsp (30g) unsalted butter, melted
Instructions:
- Preheat oven to 400°F (200°C). Grease a 12-cup standard muffin tin with butter or line with paper liners.
- In a large bowl, whisk together cornmeal, flour, sugar, baking powder, and salt until no clumps remain.
- In a medium bowl, beat the eggs, then whisk in the buttermilk, melted butter, and honey until smooth and pale.
- Pour the wet ingredients into the dry bowl. Using a spatula, gently fold the mixture together until just combined; stop as soon as no dry flour streaks remain.
- Gently fold in the shredded cheddar cheese and diced jalapeños until distributed, being careful not to over-mix.
- Divide the batter evenly among the 12 muffin cups. Top each with a pinch of extra cheese and a drizzle of the remaining melted butter.
- Bake for 18-20 minutes or until the tops are mahogany-colored and a toothpick inserted in the center comes out clean.
- Cool in the pan for 5 minutes before transferring to a wire rack.
