Ingredients:
- 4 boneless, skinless chicken breasts (approx. 1.5 lbs / 680g)
- 8 tbsp olive oil (2 tbsp per breast)
- 1 tsp sea salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 1 tsp smoked paprika
Instructions:
- Preheat your oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper. Note: A hot oven is critical for that initial sear.
- Pat the chicken breasts completely dry with paper towels. Ensure they are bone dry to the touch so the oil can adhere and the crust can form.
- Rub 2 tbsp olive oil over each breast. Note: This creates a barrier that keeps juices in.
- Evenly coat with 1 tsp sea salt, 1/2 tsp black pepper, 1 tsp garlic powder, and 1 tsp smoked paprika. Press the spices into the meat with your palms to ensure they don't just slide off.
- Place the breasts on the prepared baking sheet. Leave at least 2 inches of space between them to avoid steaming.
- Bake for 18–22 minutes until the exterior is deep golden brown and the meat feels firm.
- Check with a thermometer. Pull them out once the thickest part hits 160°F (71°C).
- Transfer the chicken to a clean plate or cutting board.
- Tent loosely with foil.
- Let rest for 5–10 minutes until the internal temperature reaches 165°F (74°C).
