Ingredients:

  • 4 boneless, skinless chicken breasts (approx. 1.5 lbs / 680g)
  • 8 tbsp olive oil (2 tbsp per breast)
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp smoked paprika

Instructions:

  1. Preheat your oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper. Note: A hot oven is critical for that initial sear.
  2. Pat the chicken breasts completely dry with paper towels. Ensure they are bone dry to the touch so the oil can adhere and the crust can form.
  3. Rub 2 tbsp olive oil over each breast. Note: This creates a barrier that keeps juices in.
  4. Evenly coat with 1 tsp sea salt, 1/2 tsp black pepper, 1 tsp garlic powder, and 1 tsp smoked paprika. Press the spices into the meat with your palms to ensure they don't just slide off.
  5. Place the breasts on the prepared baking sheet. Leave at least 2 inches of space between them to avoid steaming.
  6. Bake for 18–22 minutes until the exterior is deep golden brown and the meat feels firm.
  7. Check with a thermometer. Pull them out once the thickest part hits 160°F (71°C).
  8. Transfer the chicken to a clean plate or cutting board.
  9. Tent loosely with foil.
  10. Let rest for 5–10 minutes until the internal temperature reaches 165°F (74°C).
