Ingredients:

  • 1 lb ground lamb (80/20 fat ratio)
  • 1/2 cup panko breadcrumbs
  • 1 large egg, beaten
  • 3 cloves garlic, minced
  • 1/4 cup fresh parsley, finely chopped
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • 1/2 tsp ground coriander
  • 1 tsp kosher salt
  • 1/2 tsp cracked black pepper
  • 2 tbsp olive oil
  • 3/4 cup Greek yogurt (full fat)
  • 1/4 cup cucumber, grated and squeezed dry
  • 1 tbsp lemon juice
  • 1 clove garlic, grated
  • 1 tbsp fresh dill, chopped
  • 1/4 tsp salt

Instructions:

  1. Combine the ground lamb, panko, egg, minced garlic, parsley, and all spices in a large bowl.
  2. Using damp hands, gently fold the ingredients together until just combined to avoid a rubbery texture, then roll into 1-inch spheres.
  3. Cook the meatballs using one of three methods: Bake at 400°F (200°C) for 15-18 minutes, Air Fry at 375°F (190°C) for 10-12 minutes, or pan-sear in olive oil over medium-high heat for 3-4 minutes per side until caramelized.
  4. While the meatballs rest for 5 minutes, whisk together the Greek yogurt, squeezed cucumber, lemon juice, garlic, dill, and salt in a small bowl.
