Ingredients:
- 2 cups leftover mashed potatoes, chilled
- 1/4 cup all-purpose flour
- 1 large egg, beaten
- 1/2 cup sharp cheddar cheese, shredded
- 4 oz cooked bacon, crumbled
- 2 tbsp green onions, thinly sliced
- 1/2 tsp garlic powder
- 1/4 tsp salt
- 1/4 tsp black pepper
- 2 tbsp unsalted butter
Instructions:
- Combine the chilled mashed potatoes, flour, and beaten egg in a large bowl.
- Stir in the shredded cheddar, crumbled bacon, green onions, garlic powder, salt, and pepper. Mix until ingredients are evenly distributed, avoiding overworking the dough.
- Scoop approximately 1/4 cup of the mixture and roll it into a ball.
- Gently press the ball down into a patty about 3/4 inch thick. Note: Don't make them too thin or they'll dry out
- Heat the butter or oil over medium heat until it shimmers.
- Carefully place the patties in the pan.
- Fry for 3–4 minutes per side until a deep mahogany colored crust forms without moving them.
- Remove the cakes from the pan.
- Place them on a paper towel lined plate to drain.
