Ingredients:

  • 2 cups leftover mashed potatoes, chilled
  • 1/4 cup all-purpose flour
  • 1 large egg, beaten
  • 1/2 cup sharp cheddar cheese, shredded
  • 4 oz cooked bacon, crumbled
  • 2 tbsp green onions, thinly sliced
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp unsalted butter

Instructions:

  1. Combine the chilled mashed potatoes, flour, and beaten egg in a large bowl.
  2. Stir in the shredded cheddar, crumbled bacon, green onions, garlic powder, salt, and pepper. Mix until ingredients are evenly distributed, avoiding overworking the dough.
  3. Scoop approximately 1/4 cup of the mixture and roll it into a ball.
  4. Gently press the ball down into a patty about 3/4 inch thick. Note: Don't make them too thin or they'll dry out
  5. Heat the butter or oil over medium heat until it shimmers.
  6. Carefully place the patties in the pan.
  7. Fry for 3–4 minutes per side until a deep mahogany colored crust forms without moving them.
  8. Remove the cakes from the pan.
  9. Place them on a paper towel lined plate to drain.
