Ingredients:

  • 2 English muffins, split
  • 2 large eggs
  • 2 slices Canadian bacon
  • 2 slices American cheese
  • 2 tbsp unsalted butter, softened
  • 1 tsp vegetable oil
  • 1 tsp water

Instructions:

  1. Butter the cut sides of the English muffins generously.
  2. Place muffins butter-side down in a hot skillet over medium heat and toast until the edges are mahogany-colored and the center is crisp. Remove and set aside.
  3. Grease the inside of a 3-inch egg ring with a small amount of vegetable oil and place it in the skillet over medium-low heat.
  4. Crack one egg directly into the ring. Add 1/2 tsp of water to the empty space around the ring and cover the pan with a lid.
  5. Steam for 2–3 minutes until the whites are opaque and the yolk is set. Carefully lift the ring to release the egg. Repeat for the second sandwich.
  6. In the same pan, sear the Canadian bacon for 30 seconds per side until glistening.
  7. Place a slice of American cheese on the hot bacon while it is still in the pan to begin the melt.
  8. Assemble the sandwich in the following order: bottom muffin, Canadian bacon, melted cheese, steamed egg, and top muffin. Press down lightly to fuse the layers.
