Ingredients:
- 2 English muffins, split
- 2 large eggs
- 2 slices Canadian bacon
- 2 slices American cheese
- 2 tbsp unsalted butter, softened
- 1 tsp vegetable oil
- 1 tsp water
Instructions:
- Butter the cut sides of the English muffins generously.
- Place muffins butter-side down in a hot skillet over medium heat and toast until the edges are mahogany-colored and the center is crisp. Remove and set aside.
- Grease the inside of a 3-inch egg ring with a small amount of vegetable oil and place it in the skillet over medium-low heat.
- Crack one egg directly into the ring. Add 1/2 tsp of water to the empty space around the ring and cover the pan with a lid.
- Steam for 2–3 minutes until the whites are opaque and the yolk is set. Carefully lift the ring to release the egg. Repeat for the second sandwich.
- In the same pan, sear the Canadian bacon for 30 seconds per side until glistening.
- Place a slice of American cheese on the hot bacon while it is still in the pan to begin the melt.
- Assemble the sandwich in the following order: bottom muffin, Canadian bacon, melted cheese, steamed egg, and top muffin. Press down lightly to fuse the layers.
