Ingredients:
- 1 lb ground lamb (80/20 lean-to-fat ratio)
- 1/2 cup plain Greek yogurt
- 1/4 cup fresh parsley, finely chopped
- 2 tbsp fresh oregano, minced
- 3 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1 tsp lemon juice
- 2 tbsp extra-virgin olive oil
Instructions:
- In a large bowl, combine the ground lamb, Greek yogurt, minced garlic, lemon juice, and all spices. Using your hands or a fork, gently mix until just combined, avoiding overworking the meat.
- Scoop approximately 1 tbsp of the mixture and roll it between your palms to form a ball roughly 1 inch in diameter. Place the meatballs on a parchment-lined tray.
- Preheat your oven to 400°F (200°C). Heat olive oil in an oven-safe skillet over medium-high heat until shimmering. Add the meatballs in a single layer and sear for 2-3 minutes per side until a mahogany-brown crust forms.
- Transfer the skillet into the oven and bake for 6-8 minutes, or until a meat thermometer indicates an internal temperature of 160°F (71°C).
