Ingredients:

  • 1 1/2 cups (190g) all-purpose flour
  • 1/2 tsp (3g) baking soda
  • 1/2 tsp (2g) baking powder
  • 1/2 tsp (3g) salt
  • 1 tsp (2g) ground cinnamon
  • 1/2 cup (110g) vegetable oil
  • 3/4 cup (150g) granulated sugar
  • 1/2 cup (100g) packed light brown sugar
  • 2 large eggs
  • 1 tsp (5ml) pure vanilla extract
  • 1 1/2 cups (225g) grated zucchini
  • 1 cup (170g) semi-sweet chocolate chips

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9x5 inch loaf pan with butter or line it with parchment paper.
  3. Grate your zucchini using the medium holes of a box grater and set aside.
  4. In a large bowl, combine the flour, baking soda, baking powder, salt, and cinnamon. Whisk until there are no clumps.
  5. Create a well in the center of the dry ingredients. Pour in the vegetable oil, granulated sugar, brown sugar, eggs, and vanilla. Whisk until the mixture is smooth and the sugar has begun to dissolve.
  6. Use a rubber spatula to fold in the grated zucchini until evenly distributed.
  7. Gently stir in the semi-sweet chocolate chips, mixing only until incorporated to avoid overworking the gluten.
  8. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  9. Bake for 55–65 minutes, or until the top is a deep golden brown and a toothpick inserted into the center comes out with just a few moist crumbs.
