Ingredients:
- 1.5 cups (180g) all-purpose flour
- 0.5 cup (45g) unsweetened cocoa powder
- 1 tsp (5g) baking soda
- 0.5 tsp (3g) salt
- 1 cup (200g) granulated sugar
- 0.5 cup (120ml) neutral oil
- 2 large (100g) eggs
- 1 tsp (5ml) vanilla extract
- 1.5 cups (225g) grated zucchini
- 1 cup (170g) semi-sweet chocolate chips
Instructions:
- Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan with butter or line with parchment paper. Grate zucchini and press gently between paper towels to remove excess water.
- In a large mixing bowl, whisk together sugar, oil, eggs, and vanilla until glossy. Stir in the grated zucchini.
- Sift flour, cocoa powder, baking soda, and salt directly into the wet ingredients. Fold gently with a spatula just until no streaks of flour remain.
- Fold in the semi-sweet chocolate chips.
- Pour batter into the prepared pan and bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean or with moist crumbs.
- Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack.
