Ingredients:
- 8 oz cream cheese, softened to room temperature
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 2 cups heavy whipping cream, chilled
- 1 package (3.4 oz) instant orange pudding mix
- 1/2 cup cold milk
- 14 oz honey graham crackers
- 11 oz mandarin orange segments, thoroughly drained
Instructions:
- Beat the softened cream cheese, powdered sugar, and vanilla extract until the mixture is smooth and pure white.
- In a separate chilled bowl, whip the heavy cream until stiff peaks form, then gently fold the whipped cream into the cream cheese mixture using a spatula.
- Whisk the instant pudding mix with cold milk until thickened, then fold this mixture into the stabilized cream base.
- Carefully stir in the drained mandarin orange segments.
- Line the bottom of a 9x9 inch baking dish with a layer of graham crackers, breaking them to fit the corners.
- Spread 1/3 of the orange cream mixture over the crackers. Repeat the layers of crackers and cream until all ingredients are used, finishing with a cream layer on top.
- Cover the dish tightly with plastic wrap and chill in the refrigerator for at least 6 hours or overnight.
