Ingredients:

  • 1 lb fresh green beans, trimmed
  • 2 tbsp extra virgin olive oil
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 3 cloves garlic, minced
  • 1/3 cup grated Parmesan cheese
  • 1 tsp fresh lemon juice
  • 1/2 tsp lemon zest

Instructions:

  1. Pat the trimmed green beans completely dry with a paper towel to prevent steaming.
  2. In a large mixing bowl, toss the green beans with olive oil, salt, and pepper until evenly coated.
  3. Spread the beans in a single layer on a preheated, parchment-lined rimmed baking sheet.
  4. Roast in a preheated oven at 425°F (218°C) for 12–15 minutes until blistered and charred in spots.
  5. Remove the pan from the oven and immediately toss the beans with minced garlic and grated Parmesan cheese.
  6. Return to the oven for an additional 3–5 minutes until the cheese is melted and garlic is fragrant.
  7. Remove from heat and drizzle with fresh lemon juice and lemon zest before serving.
