Ingredients:
- 1 lb fresh green beans, trimmed
- 2 tbsp extra virgin olive oil
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- 3 cloves garlic, minced
- 1/3 cup grated Parmesan cheese
- 1 tsp fresh lemon juice
- 1/2 tsp lemon zest
Instructions:
- Pat the trimmed green beans completely dry with a paper towel to prevent steaming.
- In a large mixing bowl, toss the green beans with olive oil, salt, and pepper until evenly coated.
- Spread the beans in a single layer on a preheated, parchment-lined rimmed baking sheet.
- Roast in a preheated oven at 425°F (218°C) for 12–15 minutes until blistered and charred in spots.
- Remove the pan from the oven and immediately toss the beans with minced garlic and grated Parmesan cheese.
- Return to the oven for an additional 3–5 minutes until the cheese is melted and garlic is fragrant.
- Remove from heat and drizzle with fresh lemon juice and lemon zest before serving.
