Ingredients:
- 6 large eggs (300g)
- ¼ cup (60ml) whole milk
- ½ tsp (3g) salt
- ¼ tsp (1g) black pepper
- ½ cup (60g) shredded sharp cheddar cheese
- ½ cup (75g) cooked breakfast sausage, crumbled
- ½ cup (30g) fresh spinach, finely chopped
- 2 tbsp (30g) green onions, sliced
Instructions:
- Preheat oven to 350°F (175°C) and generously coat a muffin tin with non-stick spray or melted butter.
- Ensure the sausage, spinach, and cheese are chopped into small, even pieces.
- In a large mixing bowl, whisk the eggs, milk, salt, and pepper until the mixture is uniform and slightly frothy.
- Fold in the shredded cheese, cooked sausage, spinach, and green onions using a spatula until evenly dispersed.
- Divide the mixture evenly among 6 muffin cups, filling each approximately ¾ of the way to the top.
- Bake for 20–22 minutes until the centers are set and the tops are light golden brown.
- Allow the muffins to cool in the pan for 5 minutes before loosening the edges with a knife and removing.
