  • ¼ cup (60ml) whole milk
  • ½ tsp (3g) salt
  • ¼ tsp (1g) black pepper
  • ½ cup (60g) shredded sharp cheddar cheese
  • ½ cup (75g) cooked breakfast sausage, crumbled
  • ½ cup (30g) fresh spinach, finely chopped
  • 2 tbsp (30g) green onions, sliced

Instructions:

  3. In a large mixing bowl, whisk the eggs, milk, salt, and pepper until the mixture is uniform and slightly frothy.
  4. Fold in the shredded cheese, cooked sausage, spinach, and green onions using a spatula until evenly dispersed.
  5. Divide the mixture evenly among 6 muffin cups, filling each approximately ¾ of the way to the top.
  6. Bake for 20–22 minutes until the centers are set and the tops are light golden brown.
  7. Allow the muffins to cool in the pan for 5 minutes before loosening the edges with a knife and removing.
