Ingredients:

  • 1.5 cups (190g) all-purpose flour
  • 0.5 cup (45g) unsweetened cocoa powder
  • 1 tsp (5g) baking soda
  • 0.5 tsp (3g) salt
  • 1 cup (200g) granulated sugar
  • 0.5 cup (100g) packed brown sugar
  • 0.5 cup (115g) melted unsalted butter
  • 2 large (100g) eggs
  • 1 tsp (5ml) vanilla extract
  • 1.5 cups (225g) grated zucchini
  • 1 cup (170g) semi-sweet chocolate chips

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan with butter or line it with parchment paper, leaving an overhang on the sides.
  2. Grate the zucchini using the small holes of a box grater to ensure fine shreds that melt into the batter.
  3. In a large mixing bowl, whisk together the all-purpose flour, cocoa powder, baking soda, and salt. Stir in the granulated sugar and brown sugar.
  4. Create a well in the center of the dry ingredients and pour in the melted butter, eggs, and vanilla extract. Stir with a spatula until the wet and dry ingredients are mostly combined.
  5. Gently fold in the grated zucchini and semi-sweet chocolate chips until no streaks of dry flour remain.
  6. Pour the batter into the prepared pan and smooth the top. Bake for 50–60 minutes until the edges slightly pull away from the sides and a toothpick inserted into the center comes out with a few moist crumbs attached.
