Ingredients:
- 1.5 cups (190g) all-purpose flour
- 0.5 cup (45g) unsweetened cocoa powder
- 1 tsp (5g) baking soda
- 0.5 tsp (3g) salt
- 1 cup (200g) granulated sugar
- 0.5 cup (100g) packed brown sugar
- 0.5 cup (115g) melted unsalted butter
- 2 large (100g) eggs
- 1 tsp (5ml) vanilla extract
- 1.5 cups (225g) grated zucchini
- 1 cup (170g) semi-sweet chocolate chips
Instructions:
- Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan with butter or line it with parchment paper, leaving an overhang on the sides.
- Grate the zucchini using the small holes of a box grater to ensure fine shreds that melt into the batter.
- In a large mixing bowl, whisk together the all-purpose flour, cocoa powder, baking soda, and salt. Stir in the granulated sugar and brown sugar.
- Create a well in the center of the dry ingredients and pour in the melted butter, eggs, and vanilla extract. Stir with a spatula until the wet and dry ingredients are mostly combined.
- Gently fold in the grated zucchini and semi-sweet chocolate chips until no streaks of dry flour remain.
- Pour the batter into the prepared pan and smooth the top. Bake for 50–60 minutes until the edges slightly pull away from the sides and a toothpick inserted into the center comes out with a few moist crumbs attached.
