Ingredients:

  • 1.5 cups (190g) all-purpose flour
  • 0.5 cup (45g) unsweetened cocoa powder
  • 1 tsp (5g) baking soda
  • 0.5 tsp (3g) salt
  • 0.5 cup (115g) unsalted butter, melted and cooled
  • 1 cup (200g) granulated sugar
  • 2 large (100g) eggs, room temperature
  • 1 tsp (5ml) vanilla extract
  • 1.5 cups (170g) finely shredded zucchini, squeezed lightly
  • 1 cup (170g) semi-sweet chocolate chips

Instructions:

  1. Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan. Grate the zucchini finely, place it in a clean kitchen towel, and give it a gentle squeeze to remove excess pooling water.
  2. In a large bowl, whisk the melted butter and sugar until combined. Add eggs one at a time, beating well after each, then stir in the vanilla extract.
  3. Sift in the flour, cocoa powder, baking soda, and salt. Using a spatula, fold the dry ingredients into the wet until just combined; do not overmix.
  4. Fold in the squeezed zucchini and semi-sweet chocolate chips.
  5. Pour the batter into the prepared pan and bake for 50–60 minutes, or until the edges pull away from the pan and a toothpick inserted into the center comes out clean.
