Ingredients:

  • 2 cups (60g) fresh baby spinach, finely chopped
  • 1 tbsp (15ml) olive oil
  • 1 clove (5g) garlic, minced
  • 1/4 cup (30g) red onion, finely diced
  • 2 cups (480ml) liquid egg whites
  • 1/2 cup (115g) low-fat cottage cheese
  • 1/2 cup (50g) crumbled feta
  • 1/2 tsp (3g) sea salt
  • 1/4 tsp (1g) black pepper
  • 1/4 tsp (1g) garlic powder

Instructions:

  1. Heat olive oil in a skillet over medium heat.
  2. Add diced onion and garlic, sautéing for 2 minutes until translucent.
  3. Toss in the chopped spinach and cook for 2–3 minutes until completely wilted.
  4. Remove from heat and let the mixture cool for 5 minutes to prevent the eggs from cooking prematurely.
  5. In a large bowl, combine the liquid egg whites and cottage cheese.
  6. Whisk vigorously for 60 seconds until the mixture is frothy and pale.
  7. Stir in the salt, pepper, and garlic powder until fully integrated.
  8. Preheat your oven to 350°F (175°C).
  9. Divide the sautéed spinach mixture evenly among the 12 lined muffin cups.
  10. Pour the egg white mixture over the spinach, filling each cup about 3/4 of the way to the top.
  11. Sprinkle the crumbled feta or mozzarella evenly across the top of each muffin.
  12. Bake for 20–25 minutes, or until the centers are set and the tops are pale gold.
