Ingredients:
- 2 cups (60g) fresh baby spinach, finely chopped
- 1 tbsp (15ml) olive oil
- 1 clove (5g) garlic, minced
- 1/4 cup (30g) red onion, finely diced
- 2 cups (480ml) liquid egg whites
- 1/2 cup (115g) low-fat cottage cheese
- 1/2 cup (50g) crumbled feta
- 1/2 tsp (3g) sea salt
- 1/4 tsp (1g) black pepper
- 1/4 tsp (1g) garlic powder
Instructions:
- Heat olive oil in a skillet over medium heat.
- Add diced onion and garlic, sautéing for 2 minutes until translucent.
- Toss in the chopped spinach and cook for 2–3 minutes until completely wilted.
- Remove from heat and let the mixture cool for 5 minutes to prevent the eggs from cooking prematurely.
- In a large bowl, combine the liquid egg whites and cottage cheese.
- Whisk vigorously for 60 seconds until the mixture is frothy and pale.
- Stir in the salt, pepper, and garlic powder until fully integrated.
- Preheat your oven to 350°F (175°C).
- Divide the sautéed spinach mixture evenly among the 12 lined muffin cups.
- Pour the egg white mixture over the spinach, filling each cup about 3/4 of the way to the top.
- Sprinkle the crumbled feta or mozzarella evenly across the top of each muffin.
- Bake for 20–25 minutes, or until the centers are set and the tops are pale gold.
