Ingredients:

  • 1/4 cup extra virgin olive oil
  • 1/4 cup fresh lime juice
  • 2 tbsp fresh lemon juice
  • 2 tbsp light brown sugar
  • 1 tbsp smoked paprika
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp kosher salt
  • 1/2 tsp cracked black pepper
  • 1/4 tsp cayenne pepper
  • 3 cloves garlic, finely minced
  • 2 lbs flank steak

Instructions:

  1. Combine the olive oil, lime juice, and lemon juice in a medium mixing bowl. Whisk vigorously for 30 seconds until the liquids are fully integrated and slightly thickened.
  2. Add the brown sugar, smoked paprika, cumin, garlic powder, onion powder, salt, pepper, and cayenne. Stir with the whisk until the sugar has mostly dissolved and no clumps of paprika remain.
  3. Fold in the minced garlic and give the mixture one final whisk until it becomes a cohesive, vibrant red paste.
  4. Place the flank steak in a zip-top bag or glass container and pour the marinade over the meat. Marinate for 30 minutes to 4 hours.
  5. Grill or sear the steak over high heat until a mahogany-colored char is achieved and the desired internal temperature is reached.
