Ingredients:

  • 2 lbs mixed heirloom tomatoes
  • 1 cup cherry tomatoes
  • 1/2 medium red onion
  • 1 bunch fresh basil leaves
  • 3 tbsp extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • 1 clove garlic
  • 1/2 tsp sea salt
  • 1/4 tsp cracked black pepper
  • 8 oz fresh mozzarella pearls

Instructions:

  1. Slice heirloom tomatoes into chunky wedges and halve the cherry tomatoes. Slice red onion thinly and soak in a bowl of ice water for 10 minutes; drain and pat dry before using.
  2. In a small bowl, whisk together the olive oil, balsamic vinegar, minced garlic, salt, and pepper vigorously until the mixture is glossy and thickened.
  3. Combine the sliced tomatoes and soaked onions in a large mixing bowl.
  4. Drizzle the balsamic vinaigrette over the tomatoes and onions and toss gently to coat.
  5. Fold in the hand-torn basil leaves and the fresh mozzarella pearls.
  6. Arrange the salad on a platter and drizzle any remaining juices from the bowl over the top for the final presentation.
