Ingredients:
- 2 lbs mixed heirloom tomatoes
- 1 cup cherry tomatoes
- 1/2 medium red onion
- 1 bunch fresh basil leaves
- 3 tbsp extra virgin olive oil
- 2 tbsp balsamic vinegar
- 1 clove garlic
- 1/2 tsp sea salt
- 1/4 tsp cracked black pepper
- 8 oz fresh mozzarella pearls
Instructions:
- Slice heirloom tomatoes into chunky wedges and halve the cherry tomatoes. Slice red onion thinly and soak in a bowl of ice water for 10 minutes; drain and pat dry before using.
- In a small bowl, whisk together the olive oil, balsamic vinegar, minced garlic, salt, and pepper vigorously until the mixture is glossy and thickened.
- Combine the sliced tomatoes and soaked onions in a large mixing bowl.
- Drizzle the balsamic vinaigrette over the tomatoes and onions and toss gently to coat.
- Fold in the hand-torn basil leaves and the fresh mozzarella pearls.
- Arrange the salad on a platter and drizzle any remaining juices from the bowl over the top for the final presentation.
