Ingredients:
- 1 cup unsalted butter, softened
- 8 oz full-fat cream cheese, softened
- 1 1/2 cups granulated sugar
- 4 large eggs, room temperature
- 1 tbsp vanilla extract
- 3 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 4 oz cream cheese, softened
- 1 cup powdered sugar
- 2 tbsp whole milk
- 1 tsp vanilla extract
Instructions:
- Preheat your oven to 325°F (160°C) and grease your pan thoroughly with butter or non-stick spray.
- In a large bowl, beat the softened butter and cream cheese together on medium-high until the mixture is pale, fluffy, and completely smooth.
- Gradually add the granulated sugar, beating for another 3 minutes until the mixture looks like a thick, white cloud.
- Reduce the mixer speed to low. Add the eggs one by one, ensuring each is fully incorporated before adding the next.
- Stir in the vanilla extract.
- In a separate bowl, sift together the flour, baking powder, and salt.
- Slowly add the dry ingredients to the wet batter. Mix only until the white streaks of flour disappear.
- Pour the batter into the prepared pan and bake for 55 minutes or until a toothpick inserted into the center comes out clean.
- Prepare the glaze by beating together the softened cream cheese and powdered sugar. Stir in the milk and vanilla extract until smooth.
- Cool the cake completely on a wire rack before drizzling the vanilla cream cheese glaze over the top.
