Ingredients:

  • 1 cup unsalted butter, softened
  • 8 oz full-fat cream cheese, softened
  • 1 1/2 cups granulated sugar
  • 4 large eggs, room temperature
  • 1 tbsp vanilla extract
  • 3 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 4 oz cream cheese, softened
  • 1 cup powdered sugar
  • 2 tbsp whole milk
  • 1 tsp vanilla extract

Instructions:

  1. Preheat your oven to 325°F (160°C) and grease your pan thoroughly with butter or non-stick spray.
  2. In a large bowl, beat the softened butter and cream cheese together on medium-high until the mixture is pale, fluffy, and completely smooth.
  3. Gradually add the granulated sugar, beating for another 3 minutes until the mixture looks like a thick, white cloud.
  4. Reduce the mixer speed to low. Add the eggs one by one, ensuring each is fully incorporated before adding the next.
  5. Stir in the vanilla extract.
  6. In a separate bowl, sift together the flour, baking powder, and salt.
  7. Slowly add the dry ingredients to the wet batter. Mix only until the white streaks of flour disappear.
  8. Pour the batter into the prepared pan and bake for 55 minutes or until a toothpick inserted into the center comes out clean.
  9. Prepare the glaze by beating together the softened cream cheese and powdered sugar. Stir in the milk and vanilla extract until smooth.
  10. Cool the cake completely on a wire rack before drizzling the vanilla cream cheese glaze over the top.
