Ingredients:

  • 1/4 cup soy sauce
  • 1/4 cup olive oil
  • 2 tbsp Worcestershire sauce
  • 1 tbsp honey
  • 3 cloves garlic, minced
  • 1 tsp cracked black pepper
  • 1/2 tsp salt
  • 1.5 lbs flank steak
  • 2 tbsp avocado oil
  • 3 tbsp unsalted butter
  • 3 sprigs fresh thyme
  • 3 cloves garlic, smashed

Instructions:

  1. Pat the marinated flank steak completely dry with paper towels to ensure a proper sear. Season lightly with additional salt and pepper if desired.
  2. Place a cast iron skillet over medium-high heat with avocado oil until the oil begins to shimmer and barely smoke.
  3. Carefully lay the steak in the pan, pressing down slightly with tongs. Sear for 4–5 minutes without moving the meat to develop a mahogany crust.
  4. Flip the steak. Immediately add the unsalted butter, smashed garlic, and thyme to the pan.
  5. Tilt the pan and use a large spoon to continuously pour the foaming, aromatic butter over the steak for the final 3–4 minutes of cooking.
  6. Remove the steak from the heat when the internal temperature reaches 130°F (54°C) for medium-rare. Transfer to a cutting board and let rest for 10 minutes.
  7. Slice the steak into thin strips perpendicular (across) the grain to ensure tenderness.
