Ingredients:
- 1/4 cup soy sauce
- 1/4 cup olive oil
- 2 tbsp Worcestershire sauce
- 1 tbsp honey
- 3 cloves garlic, minced
- 1 tsp cracked black pepper
- 1/2 tsp salt
- 1.5 lbs flank steak
- 2 tbsp avocado oil
- 3 tbsp unsalted butter
- 3 sprigs fresh thyme
- 3 cloves garlic, smashed
Instructions:
- Pat the marinated flank steak completely dry with paper towels to ensure a proper sear. Season lightly with additional salt and pepper if desired.
- Place a cast iron skillet over medium-high heat with avocado oil until the oil begins to shimmer and barely smoke.
- Carefully lay the steak in the pan, pressing down slightly with tongs. Sear for 4–5 minutes without moving the meat to develop a mahogany crust.
- Flip the steak. Immediately add the unsalted butter, smashed garlic, and thyme to the pan.
- Tilt the pan and use a large spoon to continuously pour the foaming, aromatic butter over the steak for the final 3–4 minutes of cooking.
- Remove the steak from the heat when the internal temperature reaches 130°F (54°C) for medium-rare. Transfer to a cutting board and let rest for 10 minutes.
- Slice the steak into thin strips perpendicular (across) the grain to ensure tenderness.
