Ingredients:
- 1 lb (450g) ground lamb
- 1 tbsp (15ml) olive oil
- 1 small (110g) yellow onion, finely diced
- 3 cloves (9g) garlic, minced
- 1 tsp (2g) ground cumin
- 1 tsp (2g) smoked paprika
- ½ tsp (1g) ground cinnamon
- ½ tsp (3g) salt
- ¼ tsp (1g) black pepper
- 1 tbsp (15ml) fresh lemon juice
- 2 cups (300g) cooked basmati rice or quinoa
- 1 cup (150g) cherry tomatoes, halved
- 1 cup (100g) English cucumber, diced
- ¼ cup (15g) red onion, thinly sliced
- ¼ cup (15g) fresh parsley, chopped
- ¼ cup (30g) crumbled feta cheese
- ½ cup (120g) classic hummus
- ½ cup (120g) tzatziki sauce
- 1 tbsp (15ml) olive oil for drizzling
Instructions:
- Heat olive oil in the skillet over medium-high heat until shimmering.
- Add ground lamb to the skillet. Let it sit undisturbed for 3-4 minutes to develop a deep brown crust before breaking it into chunks.
- Stir in the diced onion and cook for 3 minutes until translucent. Add garlic, cumin, paprika, cinnamon, salt, and pepper.
- Cook for another 5 minutes until the lamb is fully browned and smells nutty and aromatic.
- Remove from heat and stir in the lemon juice to brighten the flavors.
- Toss the diced cucumber, cherry tomatoes, and red onion in a mixing bowl. Add a pinch of salt and a squeeze of lemon (optional) to create a quick, crisp salad.
- Divide the cooked grains equally among four bowls.
- Top the grains with the spiced lamb, fresh cucumber salad, crumbled feta, parsley, a dollop of hummus, and a dollop of tzatziki. Drizzle with extra virgin olive oil if desired.
