Ingredients:

  • 1 lb (450g) ground lamb
  • 1 tbsp (15ml) olive oil
  • 1 small (110g) yellow onion, finely diced
  • 3 cloves (9g) garlic, minced
  • 1 tsp (2g) ground cumin
  • 1 tsp (2g) smoked paprika
  • ½ tsp (1g) ground cinnamon
  • ½ tsp (3g) salt
  • ¼ tsp (1g) black pepper
  • 1 tbsp (15ml) fresh lemon juice
  • 2 cups (300g) cooked basmati rice or quinoa
  • 1 cup (150g) cherry tomatoes, halved
  • 1 cup (100g) English cucumber, diced
  • ¼ cup (15g) red onion, thinly sliced
  • ¼ cup (15g) fresh parsley, chopped
  • ¼ cup (30g) crumbled feta cheese
  • ½ cup (120g) classic hummus
  • ½ cup (120g) tzatziki sauce
  • 1 tbsp (15ml) olive oil for drizzling

Instructions:

  1. Heat olive oil in the skillet over medium-high heat until shimmering.
  2. Add ground lamb to the skillet. Let it sit undisturbed for 3-4 minutes to develop a deep brown crust before breaking it into chunks.
  3. Stir in the diced onion and cook for 3 minutes until translucent. Add garlic, cumin, paprika, cinnamon, salt, and pepper.
  4. Cook for another 5 minutes until the lamb is fully browned and smells nutty and aromatic.
  5. Remove from heat and stir in the lemon juice to brighten the flavors.
  6. Toss the diced cucumber, cherry tomatoes, and red onion in a mixing bowl. Add a pinch of salt and a squeeze of lemon (optional) to create a quick, crisp salad.
  7. Divide the cooked grains equally among four bowls.
  8. Top the grains with the spiced lamb, fresh cucumber salad, crumbled feta, parsley, a dollop of hummus, and a dollop of tzatziki. Drizzle with extra virgin olive oil if desired.
